For the chicken

  • 4 pieces boneless skinless chicken breasts (about 2 ½ pounds)
  • ¼ cup balsamic vinegar Adds tang and depth

  • 1 cup grape tomatoes Contributes juicy texture
  • 4-8 slices tomato Adds freshness and moisture

Instructions
 

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • Lightly grease a 9 x 13-inch or 3-quart baking dish with nonstick cooking spray.
  • Lay the chicken breasts in the baking dish in a single layer.
  • In a mixing bowl, combine the balsamic vinegar, honey, minced garlic, olive oil, Italian seasoning, salt, and black pepper.
  • Pour the sauce over the chicken and flip the breasts to coat them thoroughly.
  • Scatter the grape tomatoes around the chicken in the baking dish.
  • Lay the slices of tomato on top of the chicken.

Baking

  • Bake uncovered for 20-25 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  • In the last 5 minutes of baking, add the mozzarella on top of the chicken.
  • Broil on HIGH for 2-3 minutes until the cheese is bubbling and starting to brown.
  • Once done, top with fresh basil before serving.

Notes

Let the chicken rest for a few minutes after baking; this allows the juices to redistribute for a juicier bite. Use high-quality balsamic vinegar for richer flavor.
