Preparation Steps

  • Cut each ripe avocado in half, remove the pit, and scoop the flesh into a mixing bowl. Dice the avocado into chunks.
  • Crumble the feta into the bowl with the diced avocado. Gently combine until well mixed but still chunky.
  • Add the seeded and diced Roma tomatoes to the mixture.
  • Stir in the diced red onion for even distribution.
  • Add the minced garlic and mix thoroughly.
  • Incorporate the chopped parsley or cilantro, being careful not to mash the mixture too much.
  • Drizzle in the olive oil and vinegar, and sprinkle with sea salt. Stir everything together until well incorporated.
  • Taste the dip and adjust the salt as needed.

Notes

Serve with pita chips, fresh vegetable sticks, or as a spread on toast. Best enjoyed fresh but can be stored for 2-3 days in the fridge.
