Preparation

  • Gather all your ingredients, cut the vegetables, and measure the spices so everything is ready.
  • In a mixing bowl, add the shredded chicken breast.
  • Mash the ripe avocado in a separate bowl until smooth.
  • Add the mashed avocado to the bowl with the shredded chicken and stir gently to combine.
  • Incorporate Greek yogurt into the mixture and stir until fully blended.
  • Squeeze fresh lime juice into the mixture and mix well.
  • Sprinkle in garlic powder, onion powder, salt, and black pepper, then stir to evenly distribute.
  • Add finely diced red onion and chopped celery to the bowl and gently fold them into the mixture.
  • Halve the cherry tomatoes and add them to the bowl, carefully incorporating them.
  • Add chopped cilantro or parsley and gently stir to incorporate.
  • Drizzle in olive oil and stir to ensure everything is well combined.
