Preparation

  • If the chicken isn't already cooked, boil or bake it until fully cooked through, then shred or chop 2 cups and place it in a large mixing bowl.
  • Slice the avocado in half, remove the pit, and scoop the flesh into the bowl with the chicken. Mash the avocado gently with a fork until creamy.
  • Incorporate the Greek yogurt (or additional mashed avocado if dairy-free) into the mixing bowl and stir thoroughly.
  • Add the finely diced celery and red onion, mixing them into the bowl until combined.
  • Toss in the fresh parsley or cilantro and lime juice, ensuring everything is evenly distributed.
  • Season the salad with minced garlic, salt, and black pepper. If using, add chili flakes or smoked paprika for extra flavor.
  • Mix all ingredients thoroughly until well combined.

Notes

For best results, use ripe avocados, adjust lime juice to taste, and avoid over-mixing. Chill before serving for a refreshing taste. Storing in an airtight container in the refrigerator is recommended.
