Preparation

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion to the pot and sauté until soft and translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Incorporate the shredded chicken, white beans, diced green chilies, chicken broth, cumin, oregano, chili powder, salt, and black pepper.
  • Bring the mixture to a gentle boil, reduce heat to low and let simmer uncovered for about 20 minutes.
  • Remove from heat and stir in sour cream and shredded cheese until thoroughly combined.

Serving

  • Taste the chili and adjust seasoning if necessary.
  • Ladle the chili into bowls, garnish with fresh cilantro, and serve with lime wedges.

Notes

Sauté onions until fully translucent for a sweet base. Adjust spices to preference; mix sour cream and cheese off heat for creaminess. Let it sit before serving.
