Chicken

  • 4 pieces (6-7 oz.) boneless skinless chicken breasts the main protein

Topping

  • 1/2 cup panko breadcrumbs adds crunch when baked
  • 2 tsp olive oil helps with browning and flavor
  • 1/2 tsp garlic powder add to topping mixture
  • 1/2 tsp salt add to topping mixture
  • 1/2 tsp black pepper add to topping mixture

Instructions
 

Preparation

  • Preheat your oven to a suitable temperature for baking.
  • In a mixing bowl, combine the cream cheese, shredded Swiss cheese, lemon zest, half of the garlic powder, half of the salt, and half of the black pepper.
  • Lay the trimmed asparagus spears down and divide the cheese mixture evenly among the chicken breasts.
  • Place two or three asparagus spears on top of the cheese mixture on each chicken breast.
  • Gently fold the chicken over the filling and secure with toothpicks if necessary.

Topping

  • In a separate bowl, combine the panko breadcrumbs, remaining garlic powder, salt, and black pepper.
  • Drizzle the olive oil over the prepared breadcrumb mixture and work it into the breadcrumbs using your fingers.
  • Press the seasoned breadcrumbs firmly onto the stuffed chicken breasts.

Cooking

  • Transfer the stuffed and coated chicken breasts to a baking dish, arranging them in a single layer.
  • Bake the chicken in the preheated oven until cooked through.
  • Allow the chicken to rest for a few minutes before serving.

Notes

Use room-temperature cream cheese to make mixing easier. For added flavor, lightly season the chicken breasts before stuffing. Ensure the asparagus is tender but not overcooked for the best texture contrast.
