Preparation

  • Cut the boneless, skinless chicken thighs or breasts into bite-size pieces, ensuring they’re similar in size for even cooking.
  • Sprinkle the chicken with salt, pepper, and garlic powder.

Cooking the Chicken

  • Heat the olive or sesame oil in a large skillet over medium heat.
  • Add the seasoned chicken pieces and cook until they turn golden brown and are cooked through, about 5-7 minutes.

Preparing the Mango Glaze

  • In a mixing bowl, combine chopped mango (or mango purée), soy sauce, honey (or maple syrup), rice vinegar (or lime juice), minced garlic, grated ginger, and optional chili flakes.

Combining

  • Pour the mango glaze mixture over the cooked chicken in the skillet and stir gently to coat.
  • Add the cornstarch mixture to thicken the sauce and cook for another minute or two until it reaches your desired thickness.

Serving

  • Serve the chicken over steamed jasmine rice or rice noodles.
