Preparation

  • Start by preparing the chicken thighs. Pat them dry with a paper towel to ensure a good sear. Cut the thighs into bite-sized pieces.
  • Heat a large skillet over medium-high heat and add olive oil. When the oil shimmers, add the chicken pieces.

Cooking

  • Cook the chicken for about 5-7 minutes, stirring occasionally, until they are browned and cooked through.
  • In a mixing bowl, combine chopped mango, soy sauce, rice vinegar, honey, minced garlic, and grated ginger. Mix to create the glaze.
  • Reduce heat to medium and pour the mango glaze over the cooked chicken. Stir gently to coat.
  • Allow the sauce to thicken slightly. Mix cornstarch with water to create a slurry, then add it to the pan.
  • Cook for an additional 1-2 minutes until the sauce thickens.
  • Add fresh lime juice, salt, black pepper, and optional chili flakes. Stir well.
  • Remove from heat. Serve over rice or noodles.
  • Garnish with sliced green onions and toasted sesame seeds.

Notes

Make sure to dry the chicken thoroughly before cooking for a nice sear. Use ripe mango for the best flavor, and adjust sweetness with honey as desired. Experiment with garnishes like cilantro.
