  • 1.5 cups shredded carrots adds texture and sweetness
  • 3.5 cups Asian Salad Kit or bagged coleslaw
  • 0.67 cup sugar snap peas or snow peas adds freshness and bite
  • 0.125 tsp red pepper flakes for added heat
  • 6 pieces green onions diced, for garnish

Preparation

  • Cook the ground chicken or turkey in a large skillet or wok over medium heat, breaking it apart until it’s no longer pink and starts to golden.
  • Add the soy sauce, honey, and optional ketchup to the skillet and stir until the meat is well coated, creating a nice glaze.
  • Incorporate the rice vinegar and sesame oil into the mixture and stir to combine thoroughly.
  • Add the minced garlic and cook for about a minute until fragrant, being careful not to brown it.
  • Mix in the shredded carrots and the Asian salad kit or coleslaw mix, cooking until the carrots are tender yet still crisp.
  • Fold in the sugar snap peas or snow peas and red pepper flakes, stirring to combine.
  • Garnish with diced green onions before serving.

Notes

Use fresh vegetables for better flavor and don't overcook the garlic to maintain its pungent flavor. Adjust sweetness to your liking and serve immediately for the best taste.
