Ingredients
  

Salad

  • 2 cups cooked chicken breast shredded or cubed
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 0.5 cup sliced green onions
  • 0.5 cup dried cranberries
  • 0.25 cup sliced almonds or chopped pecans
  • 2 tbsp sesame seeds optional
  • 0.25 cup chopped cilantro

Dressing

  • 3 tbsp soy sauce or tamari for gluten-free option
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp fresh ginger grated
  • 1 small garlic clove minced

Instructions
 

  • In a large bowl, combine chicken, red cabbage, carrots, green onions, cranberries, almonds or pecans, and cilantro.
  • In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, olive oil, ginger, and garlic until smooth.
  • Pour the dressing over the salad and toss gently until everything is evenly coated.
  • Sprinkle with sesame seeds if using. Serve immediately or chill for 15–20 minutes to let flavors meld.

Notes

For best results, toast your nuts or seeds lightly for more flavor. This salad is great for meal prep—just store the dressing separately until ready to serve. Not suitable for freezing due to fresh vegetables.
