  • 2.5 tbsp Chinese cooking wine adds depth of flavor

Main Ingredients

  • 2 tbsp oil divided; for sautéing
  • 2 large eggs binds and creates richness
  • 180 g chicken breast, cut into 1/2-inch pieces adds protein
  • 2 cloves garlic, minced enhances flavor
  • 1/2 medium onion, diced for sweetness and texture
  • 120 g bacon, cut into 1/2-inch pieces adds richness
  • 1 small carrot, finely diced provides crunch and sweetness
  • 1/2 cup corn for sweetness and color
  • 1/2 cup peas adds pop of flavor and color
  • 2 cups cooked white rice, day-old, chilled provides structure
  • 3/4 cup green onions, sliced, whites and greens separated for freshness

Preparation

  • Start by gathering all your ingredients on the counter to maintain a smooth workflow.
  • Slice the chicken breast into 1/2-inch pieces, dice the onion, and finely dice the carrot. Mince the garlic and cut the bacon into 1/2-inch pieces.

Making the Sauce

  • In a mixing bowl, combine the Chinese cooking wine, oyster sauce, light soy sauce, sesame oil, white pepper, and ground ginger. Whisk together until uniform.

Cooking

  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Once hot, add the diced bacon and stir-fry until crispy and golden for about 3 to 4 minutes.
  • Add the diced onion and garlic to the skillet; sauté for about 2 minutes until the onion is translucent.
  • Push the onion and garlic aside and add the chicken pieces to the center. Cook for 4 to 5 minutes until cooked through.
  • Push the bacon and chicken mixture to one side and crack the two eggs into the empty side, scrambling them gently until just set.
  • Add the carrots, corn, and peas to the skillet. Stir to combine and heat through for about 2 minutes.
  • Add the cooked white rice to the skillet, mixing in with the other ingredients for about 3 to 4 minutes.
  • Add the sliced green onion whites to the mix, stirring for another minute.
  • Taste and adjust seasoning if needed before removing from heat.

Notes

Use day-old rice for the best texture and ensure that ingredients are pre-chopped for a smoother cooking process. Adjust seasoning as needed.
