Ingredients
  

Salad Base

  • 3 cups shredded cooked chicken rotisserie works well
  • 4 cups shredded cabbage mix green, red, or blend
  • 1 cup shredded carrots
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds toasted
  • 3 green onions thinly sliced

Dressing

  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tsp grated ginger fresh
  • 1 clove garlic minced

Instructions
 

  • In a large bowl, combine shredded cabbage, carrots, chicken, cranberries, almonds, and green onions. Toss to combine evenly.
  • In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, grated ginger, and minced garlic until smooth.
  • Pour the dressing over the salad and toss until evenly coated. Taste and adjust seasoning as desired.
  • Let the salad rest for 10 minutes before serving. Serve chilled or at room temperature.

Notes

To make this ahead, store the salad and dressing separately and toss before serving. Try variations like crushed peanuts, mandarin oranges, or vegetarian swaps with tofu or edamame. Not freezer-friendly — best fresh.
