For the vegetables

  • 1 large red bell pepper adds sweetness and color

Preparation

  • Cut the large red and orange bell peppers into 1-inch pieces, and the red onion and zucchini into 1-inch pieces as well.
  • In a mixing bowl, combine the cut vegetables: red bell pepper, orange bell pepper, red onion, and zucchini.
  • Add one tablespoon of avocado oil to the bowl and toss the vegetables gently until well-coated.
  • Sprinkle in garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper, and stir until well mixed.
  • Slice the chicken sausage into bite-sized pieces.
  • Combine the sausage pieces with the seasoned vegetables in the mixing bowl and toss together.

Cooking

  • Preheat your air fryer according to the manufacturer's instructions.
  • Once preheated, carefully place the chicken sausage and veggie mixture into the air fryer basket in a single layer.
  • Air fry at the recommended temperature for around 10 minutes, shaking or stirring halfway through.
  • Check for tenderness in the vegetables and warmth in the sausage, returning to the air fryer if necessary.
  • Serve hot, either on its own or alongside a side salad or grain.
