Preparation

  • Toast the English muffin in a toaster or toaster oven until golden brown and crisp. Set aside.

Cooking

  • Heat a non-stick skillet over medium heat and spray with cooking spray.
  • Crack the egg into the skillet and cook until the whites are set and yolk is soft, 2-3 minutes.
  • Sprinkle cheddar cheese on the egg and let it melt for about a minute.
  • Prepare the avocado by mashing or slicing it.
  • Remove the egg and cheese from the skillet and place on one half of the toasted muffin.
  • Spread the avocado on top of the egg and cheese, then top with the other muffin half.
