- 4 boneless, skinless chicken breasts
- ½ cup mayonnaise (regular, light, or avocado-based)
- ¼ cup grated Parmesan cheese
- ½ cup seasoned breadcrumbs
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- Chopped parsley (optional for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a small bowl, mix together mayonnaise, Parmesan, and garlic powder until smooth.
- Place chicken breasts on the prepared sheet and pat dry.
- Spread the mayo-Parmesan mixture evenly over each breast using the back of a spoon.
- Sprinkle seasoned breadcrumbs over the top and press lightly to adhere.
- Bake for 20–25 minutes, or until golden and internal temp reaches 165°F.
- Let rest for 2 minutes, garnish with parsley if desired, and serve warm.
Notes
Light mayo or avocado mayo can be used for a healthier twist. Use freshly grated Parmesan for the best texture and flavor.
