Ingredients

  • 8 oz whole wheat pasta (penne or spaghetti)
  • 2 chicken sausages, sliced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach or kale (optional)
  • ½ teaspoon dried Italian herbs
  • Salt and pepper, to taste
  • Grated parmesan (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup pasta water.
  2. Heat olive oil in a large skillet over medium heat. Sauté diced onion for about 3 minutes until softened.
  3. Add minced garlic and sliced chicken sausage. Cook for 5–7 minutes until sausage is browned and heated through.
  4. Stir in halved cherry tomatoes and cook for about 4 minutes until softened.
  5. Add spinach or kale if using. Stir and cook for 1–2 minutes until wilted.
  6. Return cooked pasta to the skillet. Toss with herbs, salt, pepper, and reserved pasta water as needed.
  7. Top with grated parmesan if desired. Serve hot and adjust seasoning as needed.
