- 8 oz whole wheat pasta (penne or spaghetti)
- 2 chicken sausages, sliced
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 2 cups spinach or kale (optional)
- ½ teaspoon dried Italian herbs
- Salt and pepper, to taste
- Grated parmesan (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup pasta water.
- Heat olive oil in a large skillet over medium heat. Sauté diced onion for about 3 minutes until softened.
- Add minced garlic and sliced chicken sausage. Cook for 5–7 minutes until sausage is browned and heated through.
- Stir in halved cherry tomatoes and cook for about 4 minutes until softened.
- Add spinach or kale if using. Stir and cook for 1–2 minutes until wilted.
- Return cooked pasta to the skillet. Toss with herbs, salt, pepper, and reserved pasta water as needed.
- Top with grated parmesan if desired. Serve hot and adjust seasoning as needed.
