Ingredients

  • 2 cups shredded cooked chicken breast
  • ¾ cup plain non-fat Greek yogurt
  • ¼ cup low-fat cream cheese, softened
  • ¼ cup buffalo hot sauce
  • ⅓ cup shredded part-skim mozzarella cheese
  • 1 tablespoon ranch seasoning
  • Optional: chopped green onions
  • Optional: crumbled light blue cheese
  • Optional: diced celery or finely chopped spinach

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix Greek yogurt, softened cream cheese, buffalo sauce, and ranch seasoning until smooth and well blended.
  3. Fold in shredded chicken and part-skim mozzarella until evenly coated.
  4. Spoon into a small baking dish and spread evenly.
  5. Bake uncovered for 20–25 minutes, until hot and slightly golden.
  6. Top with green onions or light blue cheese, if desired, and serve warm with veggies or pita chips.

Notes

Use rotisserie or leftover chicken for convenience. Don’t skip softening the cream cheese, and avoid overbaking to keep it creamy and scoopable.
