Ingredients

  • 1 lb boneless, skinless chicken breast – cut into bite-sized cubes
  • 1 egg, beaten
  • ⅓ cup cornstarch
  • Salt & pepper, to taste
  • Olive oil spray or 1 tbsp olive oil
  • ¼ cup plain Greek yogurt
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon rice vinegar or lime juice

Instructions

  1. Preheat oven to 400°F or air fryer to 375°F. Line a baking sheet or grease air fryer basket.
  2. Season chicken with salt and pepper. Dip in beaten egg, then dredge in cornstarch to coat.
  3. Arrange chicken in a single layer, spray lightly with oil, and bake or air fry for 15–18 minutes, flipping halfway.
  4. In a small bowl, whisk Greek yogurt, sweet chili sauce, sriracha, honey, and vinegar.
  5. Toss cooked chicken with sauce or serve sauce on the side. Garnish with green onions or sesame seeds if desired.

Notes

Skip the sriracha for a milder version. Use light mayo instead of Greek yogurt if preferred. Be sure not to overcrowd the pan for max crispiness.
