- 1½ to 2 pounds boneless, skinless chicken breasts
- ½ cup pesto (store-bought or homemade)
- 1 to 1½ cups mozzarella cheese, shredded or sliced
- Cherry tomatoes (optional), halved
- Salt & pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Place chicken breasts in the dish and season both sides with salt and pepper.
- Spread about 2 tablespoons of pesto over each chicken breast.
- Top each with mozzarella cheese.
- Bake uncovered for 30–35 minutes, or until internal temperature reaches 165°F.
- Let rest 5 minutes before serving.
Notes
Use thighs instead of breasts for extra juiciness. Don’t overload on pesto—2 tablespoons per piece is perfect. Let the chicken come to room temperature before baking for even cooking.
